Tasty Tuesday – I Need a Drink

It’s Tuesday again, time to share some good food with you friendly folks! With all the craziness going on here, I’ve decided that alcohol is in order. Say hello to Vodka Sauce!

This recipe is super simple and uses things that I always have handy in the pantry. It makes enough for 4-5 people, but since I don’t eat it, we store the extra in a jar in the fridge. We make a lot of sauces here, and empty condiment (jelly, hosin, pickle) jars are great for keeping leftovers. Just pop them in the microwave, put the lid back on, and shake. This makes it really easy for Ant to have vodka and me to have alfredo.

Vodka Sauce

1/4 cup butter
1/2 an onion, diced
1/2 cup vodka
1 (28 ounce) can diced tomatoes
1 cup heavy cream

  • In a large skillet, saute the onions in the melted butter until golden.
  • Add the vodka and let simmer for 6 or so min. 
  • Next add the tomatoes and heat through.
  • Add the cream and let simmer about 15 min. 
  • I usually add a dash of basil before stirring in the cream. Ant also likes his a bit thicker, so I spoon about 1/3 the mixture into the food processor and give it a little spin before returning it to the pan. (you can do this before or after adding the cream)
  • I know this probably won’t help most of those who went on a diet for the new year, but oh well, I’m all about comfort food. Eat up!
